Yes, I still have apricots..haha. I tell you, these apricot trees just keep on giving! Thankfully, apricots are so versatile. Not only can you make world-famous apricot jam, but you can have them with porkchops, crumbles, cakes, pies, granola and the list goes on and on. My new favorite way to have apricots is broiled. Yup, broiled! Broiled apricots go great on top of ice cream and even better on top of greek yogurt as a healthier dessert. That’s my new favorite way of having apricots…broiled and served on top of some creamy greek yogurt.

THE TREE THAT KEEPS ON GIVING

Apricot trees in New Mexico (and I’m sure in other places) are so abundant and overflowing this year. That’s what I love about trees…they just keep on giving! So, now I have my hands full with yet some more lovely apricots. :-)

Let’s get our broil on :-)

Set top oven rack 4 inches away from broiler and preheat broiler.

Wash, halve and pit your apricots.

Place apricots cut side up on a baking sheet lined with parchment paper (makes clean up easy) and top each apricot half with about 1/4 teaspoon of butter or margarine.

Top each with 1/4 teaspoon of brown sugar and dust with cinnamon.

Broil for about 5 minutes or until apricots begin to char.

The brown sugar and butter caramelize oh so yummily (I just made up a word, I know ;-) ).

Serve in a cute dish on top of greek yogurt or ice cream.

Make sure to get some of those caramelized juices in there!

RECIPE:

  • 7-8 apricots
  • 31/2 – 4 teaspoons butter or margarine
  • 31/2 – 4 teaspoons brown sugar
  • cinnamon to taste
