Shrimp Pad Thai

So a couple of weeks ago the hubby and I went out to eat and had Thai food. I had pad thai, of course…it’s one of my favorite! Needless to say, it was delicious!! I decided to try and make it at home. I did cheat, though. I didn’t make it completely from scratch. I used a peanut simmer sauce from my local grocery store (mainly used for pad thai). If you go to your local Asian grocery store I’m sure you can find some kind of pad thai sauce and this really helps make a  delish, quick and easy meal. Check it out! Continue reading

Chicken Fried Rice

Nothing’s easier than a meal that can be prepared in one pan. That’s the beauty of stir fry and fried rice. Both can be done in less than 30 minutes and you only have one pan to wash. I had some leftover jasmine rice from the stuffed chayote squash plus I had some frozen chicken breasts and stir fry veggies. Quail Eggs, Dim Sum and Lychees…Oh my!

I work in the medical field and right now we are in the process of going paperless and completely electronic. Because of this, my week is going to be hectic!! Every start of the week I like to sit down and plan our meals. This time around I really had to plan some simple and easy meals since I’ll be working about 9-10 hours/day :-( (SNIFF, SNIFF). I went to an international supermarket (one of my favorite grocery stores!!) and decided the hubby and I would be adventurous this week! Malaysian Curry Laksa

So, I have a newly found obsession with Asian food. I’m a little addicted to Instagram, just a little ;-) , and my obsession has been exacerbated by it. There I have seen some of the most beautiful and delicious-looking Asian food such as Pho, dim sum, congee and laksa. Instagram has not only introduced me to these new, amazing dishes, but it has also encouraged me to be a little more adventurous with my cooking. Last week I decided to give Curry Laksa a try and it was wonderful!! I’ve had Laksa in restaurants before and was a little apprehensive about cooking it myself, but with a little online research I was able to come up with a recipe to mine and the hubby’s liking!
