Mini White Chocolate Apricot and Raspberry Tarts

Summer is here, and although my favorite time of the year is fall, I do enjoy all the available fruit that’s in season in the spring and summer! A week ago my mother-in-law gave me enough apricots (freshly picked from her tree) to last us the whole summer. Unfortunately, the hubby and I have not been able to eat them fast enough and have lost some to over-ripeness I started making any recipe that involved apricots just to save these sweet, candy-looking cuties!
